Ingredients

  • 2 tbsp sunflower oil
  • 500g off-cut pork pieces
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • ¼ tsp celery salt (optional for added savoury flavour)
  • 1 white onion, peeled and chopped
  • 2 carrots, peeled and chopped
  • 1-2 cups washed, chopped spinach or dark leafy greens of choice
  • 250 ml beer of choice
  • 420 ml chicken or vegetable stock (or water with 2 stock cubes)
  • ½ tsp dried thyme
  • 1 tbsp cornflour (cornstarch) mixed with 3 tbsp cold water
  • 60 ml (¼ cup) full cream milk or amanzi

Method

Heat sunflower oil in a heavy-based pot. Sauté onions until soft, then add pork pieces, browning them while seasoning with salt, black pepper, and celery salt.

Incorporate the carrots, beer, and stock, bringing to a simmer for 20 minutes. Thicken the stew with the cornflour mixture, then add milk, simmering for an additional 10 minutes.

Stir in the spinach, remove from heat, adjust seasoning to taste, and serve with maize meal and bread.
